Easy Lemon Cream Pie Chia Pudding

I'm always looking for easy and delicious dairy free recipes. Here's one I adapted from the Cultured Guru.


This recipe for Lemon Cream Pie Chia Pudding is dairy free, gluten free, vegan, and so easy to make! No, you don't have to go through the trouble of baking a pie from scratch when you need something sweet. It's also a fantastic option if you're hosting a party with guests who have any dietary restrictions.



Chia Pudding Layer:

  • 1/4 Cup Chia Seeds

  • 1 Cup Oat Milk

  • Zest of 1 Lemon

  • 2 Tablespoons Maple Syrup

  • 1/4 Teaspoon Vanilla Extract

  • 1/4 Teaspoon Sea Salt

Lemon Cream Pudding Layer:

  • 1 Cup Raw Cashews (soaked for one hour in hot water and drained)

  • 1/2 Cup Oat Milk

  • 2 Tablespoons Maple Syrup

  • 2 Tablespoons Lemon Juice

  • 1/4 Teaspoon Turmeric (for color)

  • 1/2 Teaspoon Lemon Extract


TO MAKE CHIA PUDDING LAYER:


Combine all ingredients in a bowl and stir for a minute or so until well combined.


For best results, refrigerate the chia pudding mixture for at least 3 hours.


TO MAKE LEMON CREAM PUDDING:


Soak your cashews in hot water for 60 minutes, then drain.


Combine all of the ingredients in your blender and blend until smooth and evenly combined.


NEXT STEPS:


Pour the lemon cream pudding over the chia pudding. Let set for at least 3 hours in the fridge.


Before serving, top with Salted Cocoa Crunch Granola + ENJOY!
